A delightfully surprising white wine made from 100% Cabernet Franc, the Halcyon Blanc of Cabernet Franc is incredibly fresh, fragrant, and versatile. After years of extracting a slight orange color from Cabernet Franc when trying to make rosé, Tyler decided to go rogue and just press the skins directly. The result was a clear and brilliant white wine that has quickly become a favorite.
Winemaking
Grapes are hand harvested and gently pressed with no skin contact between juice and skins. This is the only Halcyon wine that is inoculated with yeast for fermentation and aging in stainless steel tanks.
Tasting Notes
Intoxicating aromas of Jasmine, white tea, lime zest, and honeydew melon leap from the glass, followed by juicy flavors or fresh cara cara oranges, crisp gala apple and a delicate, pear quality on the finish.
